Cranberry Apple Galette Ingredients: 1/2 cup whole wheat flour 1/2 cup all-purpose flour, plus extra for work surface 1/2 cup plus one tablespoon cold unsalted butter, cut into small pieces 2 1/2 tablespoons cold water 3 medium apples, peeled and cored 1 cup frozen fresh cranberries 1/3 cup sugar 1 teaspoon cinnamon
In a food processor using the blade attachment, mix both flours and 1/2 cup butter; process until dough is the size of peas. Add water and pulse until dough comes together, then form dough into a 5 inch disk, wrap in plastic and refrigerate for 1 hour. Preheat oven to 425 and prepare a floured work surface. Roll the dough into a 12 inch circle (about 1/8 inch thickness), then transfer to a baking sheet lined with parchment paper. Slice apples to 1/4 inch thickness, then mix apples, cranberries, sugar and cinnamon and spoon into center of dough, leaving a 2 inch border. Fold dough over and dot center with remaining butter. Bake 35 minutes, or until crust is golden and fruit bubbles.

Cranberry Apple Fruit Salad Ingredients: 3 red or green apples, cored and chopped into 1 inch pieces 1 cup celery, diagonally sliced 3/4 cup Ocean Spray sweetened dried cranberries 1/2 cup hazelnuts, toasted and coarsely chopped 1/2 cup plain yogurt 3 tablespoons orange juice concentrate, thawed 1/4 teaspoon salt
Mix apples, celery, cranberries and hazelnuts in large bowl and set aside. In a small bowl, mix yogurt, orange juice concentrate and salt until blended. Pour over apple mixture and stir until blended. Makes 6-8 servings.

Cranberry Grape Cosmo Ingredients: 2 red seedless grapes 4 basil leaves Ocean Spray 100% cranberry juice Ice 2-3 ounces lemon vodka 1 tablespoon lemon juice 1 tablespoon lime juice 1 teaspoon Cointreau
In cocktail shaker, crush grapes, basil and a splash of cranberry juice with muddler. Fill shaker with ice, then add vodka, 2 tablespoons cranberry juice, lemon and lime juices, and Cointreau. Shake well and strain into a martini glass.
