Cranberry Balsamic White Pizza
1 lb. pizza dough
1 1/2 tablespoons extra virgin olive oil, divided
1 cup balsamic vinegar
3 tablespoons honey
1/2 cup fresh cranberries
3/4 cup ricotta cheese
1 cup shredded chicken
1 cup arugula
Preheat oven to 425 degrees. Roll dough into a rough circle on lightly floured surface, poke dough evenly with fork, then place on baking sheet. Brush 1 tablespoon olive oil evenly across crust and bake 15-20 minutes. Combine balsamic vinegar and honey in small saucepan and simmer 8-10 minutes, stirring occasionally until reduced by half. Coarsely chop fresh cranberries and saute in remaining 1/2 tablespoon oil for 5 minutes, then remove from heat. Remove pizza from oven and spread ricotta cheese over crust, then top with shredded chicken and arugula. Combine cranberries and balsamic reduction and drizzle over pizza, then slice and serve.
